RAID explained:
RAID can improve performance or reliability, by using multiple drives. To do so, RAID has several modes, the first of which is RAID 0.

Suppose you have a 100 MB file to write to a 10 GB hard disk. That hard disk can write just so fast and no faster, so the file will be written in a given amount of time, as fast as that hard disk will allow. Now, supposing instead of one 10 GB disk, there are two 5 GB disks of identical speed. Instead of writing 100 MB to a single disk, 50 MB can go to each disk. Writing those two 50 MB chunks simultaneously effectively halves the time required to write 100 MB.
Likewise, disk read performance will improve. Two drives can read 50 MB each twice as fast as a single disk can read 100 MB.

RAID 0 effectively doubles read/write performance.

RAID 1 (Mirroring) is a much simpler concept. Essentially, it's an automatic backup of a hard disk. Each drive in a RAID 1 array is a perfect mirror image of the other. For example, two 5 GB disks set up in an array would appear to be a single 5 GB disk. When writing to that disk, the RAID controller simultaneously writes to the other. As a result, the second disk carries a perfect image of the first. Should the first disk fail the second automatically takes over--extremely beneficial in high stress environments.

SLI explained:

SLI is short for Scalable Link Interface.

Most GeForce 6600, 6800 and now 7800 models have an internal architecture that allows the graphics core's to work in pairs. When the two GPU's work in pairs (parallel) they'll start load-balancing the workload.

There are 2 methods that SLI can load-balance:

SFR - Split frame rendering. Each graphics core is going to render a part of the screen, split horizontally. One card is responsible for the top section of the screen, the secondary card is responsible for the bottom.

AFR - Alternate frame rendering. Each graphics core is rendering a frame at a time, odd and even. The full frame is prepared by the CPU and forwarded to the driver, which makes it render on each device to render a frame in turn. This is interleaving. First card A does a frame then card B the other.

This load-balancing can effectively double up your games performance and FPS.
